headgasket question

I bought a car a couple of months ago that was blowing white smoke after it warmed up it was sweet smelling so I figured it was the headgasket. So I bring it to my friends shop and we do the headgasket and timing belt, water pump and all new belts. The car ran fine so I was happy. 3k miles later I come home and drop off some groceries at my place and go to start up my car and it's chugging and blowing white smoke. I haven't had any symptoms like temp spike or anything like that. So I pull my plugs and the 3rd cylinder plug is gunky and covered in antifreeze. Long story short what would cause this to happen in such a short amount of time? The head was flat when I pulled it.

A head that looks flat may be warped and not seen by the naked eye. "it needs to be machined"
Some may disagree but it can be a B!&ch if you don't do it right the first time.
